Chia pudding is one of my favorite breakfasts and can be a healthy dessert. I often make a batch of vanilla chia pudding and change it up during the week with different toppings…this has become of one of my favorites and I find myself sharing it a lot, so here it is.
Here are some other ideas for topping your chia puddings
Apple Pie Chia Pudding
Ingredients:
Simple Vanilla Chia:
- 2 cups milk sub of choice or vanilla protein shake
- 7 tbsp chia seeds
- sweetener of choice (to taste)
- Vanilla and/or sugar free vanilla syrup
- 3/4 cup cottage cheese (this is optional, it’s my preference)
Fried “Apples” (Zucchini):
- 1 medium zucchini – peeled, quartered, then sliced about 1/4″ thick.
- 2 tbsp butter
- 2 tsp lemon juice
- 1 tsp cinnamon
- 1.5 tbsp sweetener
- 1/2 tsp apple pie spice
- 3-4 drops of vanilla or apple extract (optional)
Steps:
Simple Vanilla Chia:
- Stir or shake well, chill and shake or stir every 20 minutes for the fist hour as it sets.
- This is easier than trying to mix it with the seeds clumped in the bottom.
Fried “Apples” (Zucchini):
- Melt butter in pan. Add diced zucchini.
- Add in sweetener, cinnamon and lemon juice saute for 3-5 minutes, or until it reaches your desired tenderness.
- Once the zucchini is tender to your liking, add in the apple pie spice and vanilla, stir well. This will thicken up the liquid quite a bit.
- Serve warm over the chia pudding or store for later by cooling and storing in an airtight container in the fridge.
- Reheat with a little extra butter for extra sauce.
Notes:
- Top with granola for a little extra yum!
