Party Foods

Football season, summer cookouts, holiday parties, birthday parties or just family game night. You could throw an amazing party that’s completely keto with these recipes. You could make a couple of these to take to a gathering to guarantee that you have keto food available. Everyone will love them, so make plenty.

I usually also supply regular crackers and chips for the non-keto people, mostly so they don’t eat all of mine. Homemade crackers and chips takes some time and patience.

I love bacon wrapped foods and have included a few in this list…but honestly, bacon wrapping food in large quantities is time consuming and frustrating in my opinion. I would suggest only committing to one bacon wrapped yummy for a gathering.

Chili Dog Casserole – This is actually a dinner recipe, but if you cut up the hot dogs I think this would be a great party food. Great with smoked sausages or lit’l smokies too.

I don’t have links for the following recipes, but they are worth sharing.

Crab Rangoon

Ingredients:

  • 8 oz. Cream Cheese
  • 4 oz. Crab Meat
  • 4 oz. Butter
  • 3 oz. Green Onions (diced)
  • Pink Salt, or Sea Salt (optional)
  • Each “wrap” is ¼ Cup Mozzarella

Instructions:

Filling

  • Melt butter in medium sauce pan on low/medium, then add green onions, Crab meat, and Salt (opt).
  • Stir frequently and let it cook down.
  • Once cooked down, put on low, and put in cream cheese and cover.
  • In a few minutes uncover turn off heat and stir the crap out of it…

Wraps

  • Preheat oven to 375
  • Cover cookie sheet with parchment paper.
  • Arrange ¼ cup each of Mozzarella into Squares on the parchment paper. Put in oven and watch closely, they will try and get all weird shaped on you, pull em out every now and again and reshape with a spatula.
  • Once they are starting to brown, pull out of oven TURN OFF OVEN. Take a spatula and separate from parchment carefully so they aren’t’ sticking.

Rangoons-

  • While wraps are still warm. Place 2 Tbsp of the filling in the center and fold carefully corner to corner. Take a fork and press down on the edges to form the wrap. Let cool…. EAT THEM!!!!

Crack Chips

Ingredients:

  • 1¼ Cups Pork Scratchings or Pork Rinds – plain no season
  • 2 Cups Shredded Cheddar Cheese
  • 2 Tbsp Chives (I used dried but you can use fresh as well)

Instructions:

  • Preheat oven to 400 degrees
  • Add 1¼ cups pork scratchings/rinds into your food processor. Grind you scratchings/rinds until fine and pour into a bowl.
  • Grate 2 cups shredded cheese in your food processor and add to bowl of pork scratchings and mix well.
  • Add 2 tbsp of chopped chives and mix thoroughly.
  • I use a muffin top pan but you can use a baking sheet if you don’t have one. Take a small amount of your mixture, it should be crumbly but may be sticky and greasy dependent on your pork scratchings. I sprinkle enough crumbles into my muffin pan enough to cover the bottom.
  • Note: do not pile to high as the chips won’t thin out and won’t be as crispy when they are thicker. If you are using a baking sheet make circular form but not to thick. You should get about 48 chips out of the mixture.
  • Bake for 10 minutes until the edges are crispy then remove from heat and let cool for a couple of minutes.

 Party Mix

Ingredients:

For the Cheese Crackers:

  • 7 slices of Cheddar Cheese cut into 9 small squares, baked

For the Party Mix:

  • 1 bag of original pork rinds broken into small pieces (I used a 5oz bag)
  • 1 cup pecans
  • ½ cup roasted almonds
  • 63 cheese crackers
  • 6 Tbsp butter, melted
  • 2 Tbsp Worcestershire sauce or Bragg’s Liquid Aminos
  • 1½ Tbsp on seasoning salt
  • ¾ tsp garlic powder
  • ½ tsp onion powder

Instructions:

  • For the Cheese Crackers:
  • Preheat oven to 400 degrees.
  • Cover cookie sheet with parchment paper.
  • Cut each deli cheese slice in 9 small squares (making 63 crackers)
  • Bake for 7-9 minutes on top shelf until cheese squares are browned and crispy.
  • Allow to cool then, then break any that have baked together.
  • For the Party Mix:
  • Allow oven to cool down to 250 degrees.
  • Cover cookie sheet with parchment paper.
  • Combine pork rinds and nuts on parchment paper.
  • In a measuring cup add melted butter and spices.
  • Pour over the pork rinds and nut mixture.
  • Toss until coated.
  • Cook for 1 hour, stirring every 15 minutes. During the last 15 minutes, add the cheese crackers to the party mix.
  • Pour party mix onto paper towels to dry on the counter.
  • Store in an airtight container.

Chex Mix Pecans

Ingredients:

  • 2 lbs pecans
  • 4 Tbsp bacon drippings
  • 4 Tbsp butter
  • 2 Tbsp hot sauce
  • 4 Tbsp worcestershire
  • 2 Tbsp celery salt
  • 2 Tbsp garlic powder
  • 1 Tbsp Cajun seasoning
  • 1 tsp Cayenne pepper (depending on how spicy you like it)

Instructions:

  • Add drippings, butter, and all seasonings to a pot and cook until everything is melted and blended.
  • Add pecans and toss until everything is coated.
  • Pour on a foil lined cookie sheet and bake at 250 for 20 mins.
  • Take out and let cool on the cookie sheet before serving.
