90 second bread

There are quite a few different recipes out there for 90 second bread. Here are a couple basics.

You can season or spice them up however you want to fit your menu, sweet or savory.

The KEY to it all, to make it resemble bread, or toast is to fry it in a skillet after cooking it. Fry it with butter like you would for a grilled cheese, it improves the flavor and texture. If it’s not fried it will have a spongy texture and can have an eggy taste to it.

These can also be baked in the oven. 375 for about 10 minutes. Thickness will determine actual time. Keep an eye on it.

Some people find that using the egg white only will reduce the “eggy” taste.

This is the one I use most…

Ingredients:

  • 3 T almond flour
  • 1 egg
  • 1/2 t baking powder
  • 1 T butter (melted) Coconut oil is ok too
  • **seasonings & spices as desired

Directions:

  • Mix all ingredients well in a microwave safe container (bowl, mug, microwave pan)
  • Microwave for 90 seconds
  • Cool until touchable
  • Slice in half to make 2 thinner slices (if needed)
  • Fry in butter until lightly browned (you can toast in a toaster if you want also)

I suggest using a 4×4 or 5×5 square pan with a smooth, flat bottom. I found this at Walmart. I prefer this, because it cooks thin and does not need to be sliced like it would if you cooked it in a mug or ramekin.

Because of the cheese this one is better for savory, but you could always leave it out or sub out mozzarella with its milder flavor.

  • 1 egg
  • 1 t sour cream
  • 1/4 t baking powder
  • 1 T cheddar cheese, grated

Directions:

  • Mix all ingredients well in a microwave safe container (bowl, mug, microwave pan)
  • Microwave for 90 seconds
  • Cool until touchable
  • Slice in half to make 2 thinner slices (if needed)
  • Fry in butter until lightly browned (you can toast in a toaster if you want also)
