Being keto means always searching for the best breads, biscuits, rolls and baked goods that can be made low carb.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 tsp salt
  • 1 Tbsp baking powder
  • 2 eggs
  • 1/3 cup sour cream
  • 4 Tbsp butter, melted

Directions:

  • Pre-heat oven to 400 
  • Mix dry ingredients in a large bowl with a fork to remove clumps.
  • Add the rest of the ingredients. 
  • Mix until smooth
  • Add mix ins if you are using any
  • Grease a muffin tin, then divide dough into muffin tins and bake for 10-12 minutes. Makes 9-12 muffins.

Recipe variations:

Cheddar Bay Biscuits: Add shredded cheddar & garlic powder to dough before baking. After baking, brush tops with melted butter.

Blueberry biscuits: Almost a cross between a muffin and a scone. Add sweetener and real blueberries to dough.

Breakfast biscuits: Add in precooked scrambled egg and breakfast meat of your choice (crumbled bacon or sausage pieces).

Corn Bread: Add 1/2 to 1 tsp of corn extract & 2 tsp sweetener. Sub out a small amount of almond meal for the flour to get the cornbread like texture. Finely chopped baby corn can be add if you want. Baby corn is way lower carb than real corn.
